The kayak looks like it's in good shape but it does have some scratches and scrapes from use on the maine coast, plus keel wear at the bow and stern from being beached or dragged. the stern wear appears to go completely through the fiberglass at its worst point.. Jarhead, while a properly cut stitch and glue kit is well within the reach of someone with basic carpentry and epoxy experience, with a kayak, you don't get a second chance for some of the steps after the resin sets up..
Re: repairs on a stitch and glue kayak your plan should work, but make sure the paper is stiff enough not to collapse. alternatively, tape over the holes you have drilled, pour your plug, remove the tape, and re-drill another hole through the epoxy.. The stitch and glue method worked quite well and was a fast way to build. i made mine out of the recommended okoume marine plywood in the different thicknesses. i painted the bottom and sides a forest green and left the topside natural with a nice stain..
